For the mushrooms
- 16 ounces mushrooms any mix: white button, cremini, shimeiji, oyster, enoki, etc.
- 5 cloves garlic minced
- 3 sprigs fresh thyme, or 1 teaspoon dried thyme (optional)
- 2 tablespoons butter or a mix of butter and olive oil
- 1 tablespoon light soy sauce
- ¼ teaspoon salt plus more to taste
For the sauce
- 3 tablespoons white miso
- 4 tablespoons butter melted
- ¼ cup reserved pasta water more as needed
- ½ cup heavy cream
- ½-¾ cup parmesan freshly grated plus more to serve
- ½ teaspoon Black pepper plus more to taste
