Air Fryer Potatoes and Onions with Everything Seasoning

Perfectly seasoned and crispy potatoes cooked with sweet vidalia onions are a side dish that goes with practically anything and are made with only 5 ingredients! And because you roast them in the air fryer, they are perfect when you want a little comfort food without turning on the oven.

Ingredients
  

Potatoes and Onions

  • 1 lb baby gold potatoes rinsed and quartered
  • 1 medium Vidalia onion thickly diced or sliced (option to use white onion)
  • 1 tablespoon olive oil extra virgin
  • 1 tbsp everything but the bagel seasoning
  • salt to taste For us, that was 1 ¼ teaspoon total, added at the end. Add salt ½ teaspoon at a time and taste as you go.

Optional: Harissa Tahini Dipping Sauce

  • ¼ cup Greek yogurt
  • 3 tablespoon tahini paste
  • 3 tablespoon lemon juice
  • 2 tablespoon harissa paste optional
  • 1 tablespoon olive oil
  • 1 tablespoon chives chopped
  • 1 clove garlic chopped
  • ½ teaspoon ground cumin
  • ¼ - ½ teaspoon salt or to taste
  • teaspoon liquid smoke optional

Instructions
 

Air Fryer Potatoes and Onions

  • Toss potato quarters and diced onions in olive oil and everything bagel seasoning.
  • Pour everything into the air fryer basket.
  • Cook at 400* for 20 minutes total, giving them a stir after 10 minutes of cooking.
  • Add salt to taste.

Optional: Harissa Tahini Dipping Sauce

  • Mix all ingredients, stirring to combine. Taste and adjust salt/lemon to taste.
