    Cheesy Baked Thin Boneless Pork Chops {Only 4 Ingredients}

    This is one of my absolutely favorite stand-by recipes for thin boneless pork chops. Excluding salt and pepper, this is a 4-ingredient recipe that yields perfectly cooked meat. Seasoned pork chop get slathered in creamy mayo, sweet onions, and extra-sharp cheddar cheese. Fast and easy to prepare, you can – and should – make this tonight!

    These cheesy, baked boneless pork chops are the epitome of weeknight dinner wins. They’re tender and savory, with just a hint of sweetness from the mayo. And then there’s the gooey layer of melted cheese. If you’re ready to take the busy family dinners to the next level, this is the recipe for you. Definitely one that you’ll add to the dinner rotation.

    Here’s What You’ll Need

    • Thin boneless pork chops: Although I generally use thick cut pork chops, for this recipe, I’m recommending thin ones because they’ll stay nice and tender thanks to the mayonnaise but cook ultra fast, making this the perfect dinner for busy weeknights! 
    • Mayonnaise: Mayonnaise acts as a tenderizer here, and also makes the sweetest, melt-in-your-mouth onions. 
    • Onion: For flavor, but also completely optional if you don’t like them.
    • Extra-sharp cheddar cheese: You can obviously just buy shredded cheddar cheese, but I go for the sharp or extra sharp blocks and shred myself. It adds five minutes but you can taste the difference
    • Optional – Green onions: For garnish. 

    How to Make Cheesy Baked Boneless Pork Chops

    1. Preheat oven to 350 degrees F. Using a meat tenderizer, lightly pound the meat on both sides.
    1. Place meat on a baking sheet lined with parchment paper. Season meat with salt and pepper.
    1. In a small bowl, mix thinly sliced onions with mayo and then spread the mayonnaise over the pork chops and top with shredded cheese. 
    1. Bake 20-25 minutes or until cheese is bubbly on top and meat is cooked through (should temp to 145 F). Optionally, you can broil the pork chops for 2-3 minutes until the cheese is browned and bubbly. 
    1. Let the pork chops rest for 3 minutes after removing them from the oven. Then serve and enjoy!

    Additions and Substitutions

    • Spice is nice. If you like a little heat, add some chipotle pepper powder to the mayo and swap cheddar for pepperjack. In fact, feel free to test other spice and combos as well. Oregano and grated, smoked gouda sound amazing to me. Lemon zest, thyme and mozzarella. Have fun with it. 
    • Winner, winner chicken dinner. Swap the pork chops for boneless, skinless chicken breasts that have been halved and pounded out with the meat tenderizer. To check for doneness, internal temp should reach 165 F.

    What To Eat with Cheesy Pork Chops?

    Boursin mashed potatoes and this swiss chard salad, or maybe toss some romaine lettuce and tomatoes in this honey mustard dressing.

    STORAGE & REHEATING

    Storage: Store in the fridge in an airtight container for up to 5 days. 

    Reheating: In the microwave for 1-2 minutes or until heated through and cheese is melted again.

    Cheesy Boneless Pork Chops in the Oven

    Thin boneless pork chops are seasoned, slathered in mayonnaise, topped with onions and covered in extra-sharp cheddar cheese and then baked in the oven until the cheese is bubbling and golden brown. It's a 4-ingredient dinner for busy weeknights the whole family will love.

    • 1 pound pork chops boneless thin cut (6-7 pork chops)
    • ½ medium yellow onion thinly sliced
    • ½ cup mayonnaise or more as needed
    • 6-8 oz Extra sharp cheddar cheese grated
    • salt/pepper to taste
    • Green onions for garnish optional
