- Brie cheese: a high-moisture, rinded cheese like brie is already half-melted at room temperature, so of course it’s perfect for making melted cheese.
- Cranberry orange jam: Sweet, bright and tart, cranberry orange jam is a natural pairing with brie’s mild flavor and luxurious mouthfeel.
- Fresh basil and mint: To strike the perfect balance between sweet and savory.
- Orange zest: To enhance the orange
- Honey: To bind the cranberries and nuts
- Dried cranberries: Adds texture that compliments the flavors in the jam.
- Pistachios: Buttery and lightly salted to add texture and keep the recipe from being overpoweringly sweet.
How to Make Air Fryer Baked Brie
- Mix together everything but the jam and the brie to create a cranberry-nut topping.
- Remove brie from the refrigerator up to one hour before baking and let it come to room temperature so it cooks faster and more evenly.
- Preheat your air fryer to 375°F for 5 minutes.
- Place the wheel of brie cheese on a piece of parchment paper and spread the top of the brie cheese with 2 tablespoon of jam.
- Place the cheese in the center of the air fryer basket.
- Cook for approximately 6-8 minutes or until soft and gooey. The brie will start to bulge at the sides and be soft in the center if you press it. Actual cooking time depends on a few factors, such as brand, size and temp of cheese when it goes in the air fryer.
- Start checking the brie after 4 minutes. (The goal is to get it out before it explodes, but if you don’t, it doesn’t matter that much. Just call it ‘lava brie’ and no one will ever know.)
- Remove from the air fryer and top with the pistachio, cranberry, honey mixture.
- Serve immediately with baguette crostini or crackers.
Tips to Making a Perfect Appetizer
- Take the chill off: If possible, take the cheese from the fridge an hour before baking, as it will help the cheese bake more evenly.
- Don’t remove the rind. This will keep the cheese from oozing everywhere and even keep it warmer longer. (It’s also my favorite part of the cheese.)
- Don’t break the bank. There are certainly many different kinds of brie: double cream, goat’s milk, domestic, imported, etc. But, we’re adding all sorts of toppings to this, so save the expensive stuff for your next cheese or charcuterie board and use an inexpensive brand. You’ll still end up with a great appetizer and perfectly gooey cheese.
- Plan for a crowd. Buy 2 wheels of brie (or a larger one) if you’re planning for a crowd.
How to Take a Brie Recipe to the Next Level (Variations)
Baked brie is a blank slate. I developed this recipe for something a little different, but there are so many other flavor combinations you can use to top baked brie if you’re looking for an easy appetizer:
- Maple syrup and almonds
- Brown sugar and pecans
- Cherry, apricot or blueberry jam and fresh basil
- Mushrooms, thyme and hazelnuts
- Mushrooms and caramelized onions
- Caramelized apples and pecans
- Garlic and rosemary
- A sheet of puff pastry with egg wash
And of course, you can serve your brie in so many different ways: with crusty sourdough bread, toasted baguette slices, crackers, raw veggies…
How Much Brie Per Person?
Plan on at least 1 to 1 ½ ounces per person, depending on what else you’re serving. An 8-ounce brie wheel will serve approximately 6 to 8 people and a 4 ounce wheel will serve 4 to 6.
I like to plan generously because no one can resist such a delicious appetizer.
Can I Use Camembert Instead of Brie?
Camembert also comes in wheels and melts like brie. Melted brie has a slightly more mellow flavor than camembert and the two cheeses won’t melt exactly the same, but they both taste great warm and with the same toppings.
Can I Make This in Advance?
Yes and no. You can prep the pistachio cranberry sauce in advance. You can even top the brie with the jam. However, wait to cook the brie until right before serving.
Remove the top layer of rind before baking if you don’t like the texture of the rind and want more of a ‘brie fondue’ for easy dipping.
Can I Reheat Brie?
If you have any leftover brie, you can definitely reheat it! The easiest way to reheat leftovers is to zap it in the microwave in 30 second intervals until you reach your desired consistency. However, if you try to reheat brie more than once it may get rubbery on you.

Baked Brie Air Fryer Recipe with Cranberries and Pistachios
Ingredients
- ½ teaspoon grated fresh orange peel
- ¼ cup dried cranberries
- ¼ cup coarsely chopped salted pistachios
- 2 tablespoon honey
- ⅛ teaspoon coarse sea salt
- ⅛ teaspoon freshly ground black pepper
- 8 oz wheel of brie
- 2 tablespoon cranberry orange jam
- 1 tablespoons chopped fresh basil optional
- ½ tablespoon chopped fresh mint optional
Instructions
- I like to rehydrate my cranberries before using in this recipe. To do that, heat ½ cup water in the microwave for a minute. Add cranberries. Let sit 5-15 minutes and then drain. If you do this, chop the cranberries as they will plump and be much bigger.
- Mix together everything but the jam, the brie, and the fresh herbs (if using) to create a cranberry-nut topping.
- Remove from the air fryer and top with the pistachio, cranberry, honey mixture.
- Optional: add chopped, fresh basil, mint, or both
- Serve immediately with baguette crostini or crackers.
